That's why you'll see things like beignets instead of Chinese donuts — familiar ideas, reinterpreted with purpose. We're also not afraid to pull in other influences when they make sense, which is why you'll find bulgogi and Korean fried wings on the menu.
Whenever possible, we commit to local sourcing. Our shrimp comes from the Gulf, and our rice is grown on a small farm in Mississippi. Ingredients matter, and we treat them that way.
